Recipe Monday: Asian Slaw

Last week I posted about what fun it was to host one of my best friend's Baby Shower. And this week I'm here to share a super simple recipe that we served, Asian Slaw.

When we were putting together the menu, we knew we wanted yummy + easy dishes that would please a crowd, not break the bank, and look delicious. Not to mention, they had to please the mama of course! So after we secured all things our preggo loves (ahem lots and lots of macaroni 'n' cheese + giant puffed Cheetos + chocolate milk) we were looking for a quick and easy dish that added a little something green and fresh. Enter, Asian Slaw. 



*Asian Slaw*

Ingredients:

  • 1 (16 oz.) package slaw
  • 1 bunch green onions, chopped
  • 1 cup slivered almonds
  • 1 cup sunflower seeds
  • 2 packages Ramen noodles (chicken flavored)
  • 3/4 cup vegetable oil
  • 1/2 cup sugar
  • 1/3 cup white vinegar
  • Salt to taste
Recipe/Instructions:


  • Crush Ramen noodles. Mix all ingredients together and add chicken flavored packets from Ramen noodles. Salt to taste if needed.  Can chill before serving, but not needed.  Enjoy!

RM: Wait, The SuperBowl is about Football?

Well my friends, it's Recipe Monday - and I promise in this long winded post to share some recipes - just be patient.  So, unless you are living under a rock - you probably are aware this weekend is host to the biggest annual sporting event by the National Football League in the continental US ~ SUPERBOWL SUNDAY! 


{Alright ladies, if football isn't your forte -I'll help you out with the key points}
      • National Football League = NFL
      • This year's game = played in New Orleans at the Mercedes-Benz Superdome
      • San Francisco 49ers (red/maroon) vs  Baltimore Ravens (black, purple and gold)
      • The 2 head coaches of the opposing teams are brothers - and therefore it's a big story

Super Bowl is really the one time of year all of us ladies actually get excited that the entire day revolves around football and every TV in the house is screening the highly anticipated kick-off, the big play touchdown and the ridiculous ref who actually thought that was intentional grounding and there wasn't pass interference on the play - I MEAN DOES THE ZEBRA EVEN HAVE EYES?! Because I'd be happy to buy him a pair of GLASSES (since the previous 8 million dollar commercial informed me it's BOGO time at Mr. Bizer's World! ---- Errrrr, scratch that...

Alright, time to be honest boys.  Yes, we're southern women (or northern -- just referring to the gals that will be in attendance with me), yes we love our football, and truth be told we actually DO know whether or not that was a bad call.  BUT - when it comes to Super Bowl Sunday - there are far too many other things we are interested in, to be solely focused on that game.  And the fact that we get to have a party in honor of them, and our men don't complain about going - WELL - color your ladies happy!

Aside from watching sweaty millionaire men in tight football pants prance around playing one of the manliest games alive (I say one because, have you seen those Aussie rugby players?! WHEW!) there is so much more to Super Bowl Sunday!  Let's talk about some of my faves shall we?

  • Friends
    • We get to spend an entire Sunday with our best friends standing around a table of delicious food while we talk and catch up on the latest news. Uhmmm is there anything better? No. No there is not. Plus - sometimes we get lucky enough and happen to be hanging at a home where there are numerous leather jackets and mullet wigs, and we get fun little keepsake photos like this :0) 


  • Games

    • At our annual party we always have games.  If you've followed my blog and are starting to understand some of my family dynamics you probably realize that competition is a big part of my genetic make-up therefore a party without some sort of game and/or competition does not exist to me.  We like to play the betting squares and scores game.  If you're hosting a party this year an need to spice it up - this is fun and not complicated, this includes instructions too - we just make ours on a big poster board and have everyone sign up as they arrive..

  • The National Anthem

    • After Whitney Houston's ground breaking performance (which I recently found out, thanks to Beyonce's pre-corded Inauguration anthem, was not live - BOOO!) and Christina Aguleira's word flub of a performance last year; this has become an enticing part of the show.  This year Alicia Key's will be singing the National Anthem and has stated she will not perform the song traditionally and instead will perform it as if it were a brand new song!  So, if this is not normally one of your favorite parts - I suggest arriving to your party on time - because I doubt it will be a performance you'll want to miss!

  • Half-Time Show

    • A-hem, do I need to mention the Janet Jackson/JT boob scandal "wardrobe-malfunction"?  Or can we all agree to disagree that ever since this moment, we vow to never miss another SuperBowl half-time show, regardless of who is performing?! I digress...  Not to mention this year we have Mrs. Beyonce Knowles on stage y'all!!  And collaborating in a bound to be show-stopping performance, we expect to see appearances by a reunited Destiny's Child (sayy whaaaa) and her hubby Jay-Z.  Wooot!


  • Commercials

    • SuperBowl commercials are the BEST.  I always love to see what the advertisers come up with.  And knowing they spent nearly 4-8 million dollars for :30-:60 spots COMPLETELY blows my mind.  I'm really digging Doritos stance on marketing and letting their customers really speak for the brand. Whatever marketing guru came up with this is brilliant.  If you're not up to speed on what I'm talking about, Doritos let's their customers create a commercial and then they send people to their Facebook page to vote for their favorite. Whichever commercial is chosen is the one that will air during the SuperBowl.  Voting for your favorite is open through January 29th - click here - I voted for the little girl and the dog - too cute. 

  • Celebrating/Cheering

    • Major sporting events are always a time to put on your best gear, hoot and holler like a crazy person. It's also a time to sit back and watch everyone else do this - which is just as much, if not more fun, than participating yourself.  And if your team pulls it out - I suggest stealing one of these poses to celebrate :0)


  • THE FOOD - {Seeeeeee I told you I'd get to recipes :0) ...}

    • Clearly, I've saved the best for last. Arguably one of THE BEST things about the SuperBowl.  The plethora of never ending, deliciously concocted, and beautifully arranged foods.  If I had it my way, every meal would be designed in tailgate/buffet style snacky fashion, but alas they are not.  So, I get extra excited for events in which it is MORE than acceptable, and often encouraged, to go after that cheese based dip for a FIFTH time. Of course there are always the staples: Buffalo Chicken Dip, Veggies (so something) and ranch, Queso, Laura's homemade White Castle Cheeseburgers and desserts, amongst the other bazillion delicious apps the gals bring. 
    • But this year, since it's the first Super Bowl party in the new house, I'm thinking I need to kick up a notch and try some new recipes.  Here's some website I've been scouring to come up with my top contenders:

      3. 25 Must See Appetizers
So, word to the wise fellas, if you're eager to watch the big game - but your lady friend isn't quite up for another Football Sunday.  I recommend finding a party to attend.  Mention these highlights and the fact that the SuperBowl is INDEED about much more than just chasing after a ball - and you're all set!  Have fun Sunday!

Recipe Monday: Crock Pot Mac and Cheese

Just another Manic Mondayyyyyy. I wish it was Sundayyyyy.  Cause that's my fundayyyyy. My i don't have to run dayyyyy.  But it's just another FRIENDSgiving Mondayyyy. So I'm thinking that's okayyyyyy.  Because I'm gonna stuff my face todayyyyyy. And I leave for New York on Wednesdayyyyy!

Alright - enough of trying to write my own lyrics (I'm just so daggone excited!), let's talk about the goods. The extra cheesy, carb-o-licious, melts in your mouth, buttery goodness of this crock pot mac and cheese recipe goods that is just what the gal goddesses ordered for our Annual FRIENDSgiving.

*Crock Pot Mac and Cheese*


Ingredients:
 (This recipe makes about 6 servings, i always double it)
  • 2 cups uncooked elbow macaroni
  • 4 tablespoons butter
  • 2 1/2 cups grated sharp cheddar cheese
    • you can use just about any cheese you like, i always use a mix of whatever i have in the fridge, but you should have SOME cheddar in there :)
  • 1/2 cup sour cream
    • I've made it with both regular and reduced fat, i can't seem to tell any difference. so if you're looking to save some cals, feel free!
  • 1 (10 3/4 ounce) can condensed cheddar cheese soup
  • 1/2 teaspoon salt
  • 1 cup whole milk
    • here's another I've made it with whole and skim, can't tell a difference - so more room to save!
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon black pepper
Directions:
  1. Boil the macaroni in water for about 6-7 minutes
    • (this is the only part that cheats, you don't actually cook the macaroni in the crock pot, so you actually get 2 dishes dirty, BUMMER! ... but i always practice the "if it's just boiled noodles the pot's clean" approach, so it ain't too bad!...Shhhhh. that's our little secret)
  2. Combine all ingredients in crock pot including cooked macaroni
  3. Cook on low for 2-4 hours stirring occasionally
    1. Cheese tends to brown near sides
  4. Serve.
    1. Voila! Cheesy, buttery, melty goodness.  ALWAYS a crowd favorite. Although I've never met a mac and cheese i didn't like :)

..FRIENDSgiving..

Remember when i told y'all about my beloved gals' nights? (if you missed it, you can catch up on that here)  so, just like Halloween & pumpkin carving if there is a holiday or theme we can parlay into our outings you can bet your bottom dollar we will.


Thanksgiving, or 'FRIENDSgiving' as we call it - is definitely no different. This calorie packed gal's night is hosted at my sweet friend Laura's house who conveniently has the largest dining room and dining room table known to man.  I think their dining room used to an attached garage or something, that has been transformed into a cozy sunken dining room - with a table that could seat an entire NFL football team.


We arrange it as a potluck, in which everyone is in charge of a different delicious dish.  Last year - BIG FAIL - FRIENDSgiving is no different than any other Thanksgiving dinner in which leftovers seem more abundant than the original meal.  And after our feast, we forgot to get cheapy Ziploc Tupperware and extra plastic bags, so divvying up the left overs amongst everyone was a bit of a challenge.  You can bet your little behind however, I'm on it this year, and have been stock piling my extra Chinese carry out containers, so I'll so up ready to battle, and that extra spoonful of dumplings will be coming home with none other than yours truly :)


Because, we ladies love our starchy sides we determined it would be better for everyone to make a yummy sides recipe and that to be our main focus.  Then, we cheated a little bit and bought some pre-cooked Kroger chickens - so no one was stuck with the everlasting job of basting a turkey for that many people.  HOWEVER, this year i have heard grumblings that our lovely Jessie Belle has some coupons for a sweet and salty Honey Baked Ham!  We're movin' on up ladies!!!


So far group text (THANK YOU, THANK YOU, Apple for this incredible invention!) lets me know there are several delicious goodies on the menu. 

 Some talk of what dishes are coming includes:
  • Stuffing
  • Truffle mac and cheese
  • Corn pudding
  • Pear and poppy seed salad
  • Cheesy potatoes
  • Sister Schubert's rolls (if you haven't had these, think O'Charley's - YUM)
  • Teddi cakes aka cinnamon cakes (a secret family recipe I am still trying to crack...and getting close!)
  • Honey Baked Ham (fingers crossed!)
  • Hash brown casserole
  • Surprise dessert ... I've heard orange cake
  • Something green (because we can't be ultimate carb-a-holics)
Oh man, all of this food talk has my tummy grumbling!  So, I'm trying to decide what delicious concoction i should make.  Last year i brought my infamous Chicken and Dumplin's - always a crowd favorite. But, SO filling amongst all of the other dishes, and i just made them for the Pumpkin Carving party - so it may be too soon?


A couple of things I'm considering:
  1. Green Bean Casserole
    • I've only ever made the French's recipe and probably would again, but bringing green beans to a gals night dinner when there would be so many other delicious carb filled dishes overshadowing my measly greens ... I think I'll pass (that was a tough decision)
  2.  Crock Pot Mac and Cheese
    • This is one my favorites and a frequent dish i like to bring to the office for potluck lunches.  It's beyond the best comfort food around and the consistency is bar none.  I think I'll duke it out with Holly and see if I can bring the Mac and Cheese and let her focus on the Stuffing :o)
    • IF i end up choosing Mac and Cheese, I'll share my recipe with you Monday - heck, even if I don't I may share it anyways!
  3. Something Pumpkin
    • Is it just me or did the introduction of Pinterest and the Pumpkin Spice Latte create an overwhelming number of "OMG I LOVE EVERYTHING PUMPKIN ENTHUSIASTS"?!
    • Don't get my wrong, i love pumpkin pie as much as the next ole' lady who makes her weekly trip to Frisch's Big Boy for extra whip cream. But seriously this is a fad i never saw coming.  It's like Bubba Gump Shrimp company meets Pumpkin Flavoring. 

okay, it may not be that serious, but you catch my drift -- if you don't believe me get on Pinterest and search Pumpkin...T.A.K.I.N.G. O.V.E.R. I tell ya!
(I feel the need to also share, i wrote the above pumpkin items down randomly in efforts to be funny, thinking of things that could possibly be "pumpkin" and LATER searched them on Pinterest...and they actually existed!?...need i say more?)
Nevertheless, it is delicious and Tis' the season so maybe I'll head down that road.
